Grasshopper Pie 🍫🌿

Introduction

Grasshopper Pie is a delightful and refreshing no-bake dessert that combines the flavors of mint and chocolate. With a creamy filling made from crème de menthe and crème de cacao liqueurs, marshmallows, and whipped cream, nestled in a crunchy Oreo cookie crust, this pie is perfect for any occasion. Its vibrant green color and smooth texture make it as visually appealing as it is delicious.

Ingredients

For The Crust

  • 2 1/2 cups Oreo cookies, crushed: Provides a rich, chocolatey base.
  • 1/4 cup unsalted butter, melted: Helps bind the crust together.

For The Pie Filling

  • 2 1/2 cups heavy cream: Whipped to add lightness and volume.
  • 2 egg whites: Whipped to stiff peaks for added fluffiness.
  • 1/4 cup granulated sugar: Sweetens the whipped egg whites.
  • 2 cups marshmallows: Melted to create a smooth and creamy base.
  • 1/4 cup water: Helps melt the marshmallows.
  • 1/4 cup green crème de menthe liqueur: Adds a minty flavor and green color.
  • 1/4 cup white crème de cacao liqueur: Provides a subtle chocolate flavor.
  • Green food gel (optional): Enhances the green color of the filling.
  • Chocolate sauce (optional): For drizzling on top.
  • Chocolate shavings (optional): For garnish.

How to Prepare

Preparing the Crust

1️⃣ Combine the crushed Oreo cookies and melted butter: In a mixing bowl, stir until the crumbs are evenly coated.

2️⃣ Form the crust: Press the mixture into the bottom and up the sides of a 9-inch pie dish to create an even crust.

3️⃣ Chill the crust: Place in the refrigerator to chill for about 30 minutes while you prepare the filling.

Making the Pie Filling

4️⃣ Melt the marshmallows: In a saucepan, combine the marshmallows and water. Heat over low heat, stirring constantly until the marshmallows are completely melted and smooth. Remove from heat and let cool slightly.

5️⃣ Whip the egg whites: In a clean mixing bowl, use an electric mixer on medium-high speed to whip the egg whites until soft peaks form. Gradually add the granulated sugar and continue to beat on medium-high speed until stiff peaks form.

6️⃣ Whip the heavy cream: In another bowl, whip the heavy cream until stiff peaks form.

7️⃣ Combine the ingredients: In a large bowl, combine the melted marshmallow mixture, green crème de menthe liqueur, white crème de cacao liqueur, and whipped heavy cream. Gently fold in the whipped egg whites until fully incorporated, being careful not to deflate the mixture. Add green food gel if desired for a more vibrant color.

Assembling the Pie

8️⃣ Fill the crust: Remove the pie crust from the refrigerator. Pour the grasshopper filling into the crust, spreading it evenly.

9️⃣ Chill the pie: Return the pie to the refrigerator and chill for at least 4 hours or until set.

Serving

🔟 Garnish and serve: Before serving, garnish the pie with chocolate shavings and drizzle with chocolate sauce if desired. Slice and serve chilled.
