Summer Berry Spinach Salad
Ingredients:
- 6 cups fresh baby spinach
- 1 cup fresh strawberries, hulled and sliced
- 1/2 cup fresh blueberries
- 1/2 cup fresh raspberries
- 1/4 cup crumbled feta cheese
- 1/4 cup sliced almonds, toasted
- 1/4 small red onion, thinly sliced
For the Dressing:
- 1/4 cup extra virgin olive oil
- 2 tablespoons balsamic vinegar
- 1 tablespoon honey
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
Instructions:
- Prepare the Salad:
- In a large salad bowl, combine the spinach, strawberries, blueberries, raspberries, red onion, and feta cheese.
- Toast the Almonds:

- In a small bowl, whisk together the olive oil, balsamic vinegar, honey, Dijon mustard, salt, and pepper until well combined.
