Ingredients (Serves 4–6)
Main:
- 4–6 bone-in, skin-on chicken thighs (about 2–2.5 lbs / 900g–1.1kg) — exactly like in your photo
- 1 large head green cabbage (about 2–3 lbs), cut into 6–8 large wedges or thick chunks
Seasonings:
- 2 tsp kosher salt (or 1.5 tsp table salt)
- 1.5–2 tsp freshly ground black pepper (you already see some in the image)
- 1 tsp smoked paprika (optional but recommended)
- 1 tsp dried thyme or Italian seasoning
- ½ tsp garlic powder
- ½ tsp onion powder (optional)
Aromatics & Liquids:
- 1 large onion, thinly sliced
- 4 garlic cloves, minced or smashed
- ½ cup (120 ml) low-sodium chicken broth or water
- 2 tbsp olive oil or melted butter
- Optional: 1–2 tbsp apple cider vinegar or lemon juice (added at the end for brightness)
Optional Add-ins for Extra Flavor:
- 2 carrots, peeled and cut into chunks
- 2 celery stalks, sliced
- ½ tsp red pepper flakes (for mild heat)
- 1 bay leaf
Step-by-Step Instructions
- Prepare the cabbage: Wash the cabbage and cut it into large wedges (keep the core attached so the wedges stay intact). This prevents it from turning to mush.
- Layer the slow cooker: Place all the cabbage wedges at the bottom of your crockpot (6-quart or larger works best). This creates a nice bed for the chicken.
- Season the chicken: Pat the chicken thighs very dry with paper towels. In a small bowl, mix the salt, pepper, paprika, thyme, garlic powder, and onion powder. Rub this seasoning all over the thighs, including under the skin if possible. Place the seasoned thighs on top of the cabbage.
- Add aromatics: Scatter the sliced onions and garlic evenly over and around the chicken. Drizzle everything with the olive oil or melted butter. Tuck in any optional carrots, celery, or bay leaf.
- Add liquid: Pour the chicken broth gently around the sides of the cooker (avoid washing the seasoning off the chicken). You don’t need much — the cabbage will release plenty of moisture.
- Cook:
- Cover and cook on LOW for 6–8 hours, or HIGH for 3–4 hours.
- The chicken is done when it reaches an internal temperature of 165°F (74°C) and is very tender. The cabbage should be soft but not completely disintegrated.
- Optional Crispy Skin Finish (highly recommended):
- Carefully remove the chicken thighs and place them skin-side up on a baking sheet.
- Broil on high for 4–8 minutes until the skin is golden and crispy. Watch closely to avoid burning.
- Finish and serve:
- Stir a splash of apple cider vinegar or lemon juice into the cabbage for extra flavor if desired.
- Serve the chicken with generous spoonfuls of the braised cabbage and juices.
Cooking Tips
- No peeking: Every time you lift the lid, you add 20–30 minutes to the cook time.
- Too much liquid? At the end, you can remove the chicken and cabbage and simmer the liquid on the stove (or use the sauté function if your slow cooker has one) to reduce it into a sauce.
- Make ahead: You can season the chicken and prep the veggies the night before. Store in the fridge and just dump into the slow cooker in the morning.
- Storage: Leftovers keep in the fridge for 3–4 days. Reheat gently in the microwave or oven. Freezes well for up to 2 months.
