Oven Baked Chicken with Potatoes and Green Beans

Ingredients
For the chicken:
- 4 large chicken breasts (about 2 lbs total)
- 4 tbsp olive oil
- 3 tsp garlic powder
- 2 tsp onion powder
- 2 tsp smoked paprika
- 1½ tsp dried thyme
- 1½ tsp dried parsley
- Salt and black pepper, to taste
- Juice of 1 lemon (optional)
- 2 tbsp melted butter (for extra richness)
For the potatoes:
- 2 lbs baby potatoes (gold or red), scrubbed and halved if large
- 2 tbsp olive oil
- 1½ tsp salt
- 1 tsp garlic powder
- 1 tsp paprika
- ½ tsp pepper
For the green beans:
- 1 lb fresh green beans, trimmed
- 1 tbsp olive oil
- Salt and pepper, to taste
- Optional: 1 tsp lemon zest or a squeeze of lemon juice
Instructions**
- Preheat Oven:
- Set to 400°F (200°C). Grease a large baking dish or sheet pan with olive oil or cooking spray.
- Prepare the Chicken:
- In a small bowl, mix olive oil, garlic powder, onion powder, paprika, thyme, parsley, salt, pepper, and lemon juice.
- Rub the seasoning all over the chicken breasts and let sit for 10–15 minutes if possible.
- Prepare the Potatoes:
- Toss baby potatoes with olive oil, salt, pepper, garlic powder, and paprika until evenly coated.
- Assemble in the Baking Dish:
- Arrange seasoned chicken breasts on one side.
- Place the potatoes on the other side.
- Bake for 20–25 minutes, uncovered.
- Add Green Beans:
- Toss green beans with olive oil, salt, and pepper.
- After the first 25 minutes, add the green beans to the baking dish.
- Continue baking for 15–20 more minutes, until:
- Chicken is fully cooked (internal temp 165°F / 74°C),
- Potatoes are fork-tender,
- Green beans are slightly crisp.
 
- Finish & Serve:
- Drizzle with melted butter or pan juices.
- Garnish with fresh herbs (parsley or chives).
- Serve hot with the flavorful sauce from the pan.
Tips**
- Add a sprinkle of Parmesan cheese over the green beans before serving for extra flavor.
- For a spicy kick, add ½ tsp red pepper flakes to the chicken seasoning.
- You can substitute green beans with broccoli, asparagus, or carrots if preferred.
