Carrot Raisin Loaf Cake

Ingredients
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon nutmeg
3/4 cup vegetable oil
1 cup brown sugar
1/2 cup granulated sugar
3 large eggs
2 teaspoons vanilla extract
2 cups finely grated carrots
3/4 cup raisins
1/2 cup chopped nuts (optional)
1/2 cup crushed pineapple, drained (optional for extra moisture)

Instructions
Preheat oven to 180°C and grease a loaf pan
In a bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg
In another large bowl, mix oil, brown sugar, and granulated sugar until smooth
Add eggs one at a time, mixing well after each addition
Stir in vanilla extract
Fold in grated carrots, raisins, and pineapple if using
Gradually add dry ingredients into wet mixture and mix until just combined
Pour batter into prepared loaf pan and smooth the top
Bake for 50 to 60 minutes or until a toothpick inserted in the center comes out clean
Let cool in the pan for 10 minutes, then transfer to a rack to cool completely

Tips
For extra flavor, soak raisins in warm water for 10 minutes before using
You can sprinkle a little sugar on top before baking for a slightly crunchy crust
This cake gets even better the next day as the flavors develop
