Garlic Butter Smothered Pork Chops

Ingredients:

  • 6 bone-in pork chops (about 1-inch thick)
  • 3 tbsp olive oil (or vegetable oil)
  • 4 tbsp unsalted butter
  • 5 garlic cloves, minced
  • 1 medium onion, thinly sliced
  • 1 cup chicken broth
  • 1/2 cup heavy cream (or half-and-half)
  • 1 tbsp Worcestershire sauce
  • 1 tsp Dijon mustard (optional, for tang)
  • 1 tsp paprika
  • 1 tsp dried thyme (or rosemary)
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp salt (to taste)
  • 1/2 tsp black pepper (to taste)
  • 2 tbsp fresh parsley, chopped (for garnish)

Instructions:

Step 1: Prepare Pork Chops

  1. Pat pork chops dry with paper towels.
  2. Season generously on both sides with salt, pepper, paprika, onion powder, and garlic powder.

Step 2: Sear the Pork Chops

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add pork chops in batches (don’t overcrowd).
  3. Sear each side for about 3–4 minutes until golden brown. Remove and set aside.

Step 3: Make the Garlic Butter Sauce

  1. Reduce heat to medium. In the same skillet, add butter.
  2. Toss in the sliced onions and sauté until soft and caramelized.
  3. Stir in the minced garlic and cook until fragrant (about 1 minute).
  4. Add chicken broth, Worcestershire sauce, Dijon mustard, and thyme. Stir well.
  5. Pour in heavy cream and let the sauce simmer for 3–5 minutes until slightly thickened.

Step 4: Smother the Chops

  1. Return pork chops to the skillet, nestling them into the sauce.
  2. Spoon sauce over the chops. Cover and simmer on low heat for 10–15 minutes, until pork is tender and cooked through (internal temp: 145°F / 63°C).

Step 5: Serve

  1. Sprinkle fresh parsley on top.
  2. Serve hot with mashed potatoes, rice, or roasted veggies.
