Savory Potato and Vegetable Bake
Ingredients:
- 3 large potatoes, peeled and grated
 - 1 onion, finely chopped
 - 1 carrot, peeled and grated
 - 1 pepper, finely chopped
 - Olive oil, for sautéing
 - Salt, to taste
 - Chives, chopped
 - 3 eggs
 - 300 ml milk
 - 200 g wholemeal flour
 - 2 tsp baking powder
 - 150 g cheese, grated

Instructions:
- Preheat the Oven:
- Preheat your oven to 180°C (350°F). Grease a baking dish or line it with parchment paper.

 - Prepare the Vegetables:
- In a large bowl, combine the grated potatoes, finely chopped onion, grated carrot, and finely chopped pepper. Mix well.

 - Sauté the Vegetables:
- Heat a little olive oil in a large skillet over medium heat. Add the vegetable mixture to the skillet and sauté until the vegetables are softened, about 5-7 minutes. Season with salt to taste. Set aside to cool slightly.

 - Prepare the Batter:
- In a separate bowl, whisk together the eggs and milk. Add the wholemeal flour and baking powder, and mix until well combined. The batter should be smooth.

 - Combine and Assemble:
- Add the sautéed vegetables to the batter and mix until everything is well combined. Stir in the chopped chives and half of the grated cheese.

 - Bake:
- Pour the mixture into the prepared baking dish. Sprinkle the remaining grated cheese evenly over the top.

 - Bake the Dish:
- Bake in the preheated oven for about 35-40 minutes, or until the top is golden brown and the center is set. You can check by inserting a toothpick into the center; it should come out clean.

 - Cool and Serve:
- Remove the dish from the oven and let it cool slightly before serving. Cut into squares or slices and enjoy!

Notes:
- Variations: You can add other vegetables like zucchini, mushrooms, or spinach based on your preference.
 - Cheese: Feel free to use your favorite type of cheese, such as cheddar, mozzarella, or a combination.
 - Herbs: Additional herbs like parsley, thyme, or rosemary can be added for extra flavor.
