Savory Potato and Vegetable Bake

Ingredients:

  • 3 large potatoes, peeled and grated
  • 1 onion, finely chopped
  • 1 carrot, peeled and grated
  • 1 pepper, finely chopped
  • Olive oil, for sautéing
  • Salt, to taste
  • Chives, chopped
  • 3 eggs
  • 300 ml milk
  • 200 g wholemeal flour
  • 2 tsp baking powder
  • 150 g cheese, grated

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 180°C (350°F). Grease a baking dish or line it with parchment paper.
  2. Prepare the Vegetables:
    • In a large bowl, combine the grated potatoes, finely chopped onion, grated carrot, and finely chopped pepper. Mix well.
  3. Sauté the Vegetables:
    • Heat a little olive oil in a large skillet over medium heat. Add the vegetable mixture to the skillet and sauté until the vegetables are softened, about 5-7 minutes. Season with salt to taste. Set aside to cool slightly.
  4. Prepare the Batter:
    • In a separate bowl, whisk together the eggs and milk. Add the wholemeal flour and baking powder, and mix until well combined. The batter should be smooth.
  5. Combine and Assemble:
    • Add the sautéed vegetables to the batter and mix until everything is well combined. Stir in the chopped chives and half of the grated cheese.
  6. Bake:
    • Pour the mixture into the prepared baking dish. Sprinkle the remaining grated cheese evenly over the top.
  7. Bake the Dish:
    • Bake in the preheated oven for about 35-40 minutes, or until the top is golden brown and the center is set. You can check by inserting a toothpick into the center; it should come out clean.
  8. Cool and Serve:
    • Remove the dish from the oven and let it cool slightly before serving. Cut into squares or slices and enjoy!
