Herb-Crusted Roasted Pork Loin
Ingredients
1½–2 kg pork loin
2 tablespoons olive oil
4 cloves garlic, minced
1 tablespoon fresh rosemary, chopped
1 tablespoon fresh parsley, chopped
1 teaspoon dried thyme
1 teaspoon paprika
1 teaspoon salt
½ teaspoon black pepper
1 tablespoon lemon juice
Optional: 1 tablespoon Dijon mustard
Method
Preheat the oven to 190°C (375°F).
Pat the pork loin dry with paper towels.
Mix the olive oil, garlic, rosemary, parsley, thyme, paprika, salt, pepper, and lemon juice into a paste. Add Dijon mustard if desired.
Rub the mixture generously over the entire pork loin.
Place the pork on a roasting tray and roast until the center reaches 63°C (145°F), followed by a short resting period.
Remove from the oven and let the meat rest for 10–15 minutes before slicing.
Slice into even pieces and garnish with fresh rosemary and parsley. Serve with roasted vegetables, potatoes, salad, or gravy.
History
Roasted pork has a long history in European and Mediterranean cooking, where pork was commonly seasoned with aromatic herbs such as rosemary, thyme, garlic, and parsley. Pork loin became particularly popular because it is a relatively lean cut that can be roasted whole and sliced for family meals and celebrations. The herb-and-garlic combination shown here reflects traditional European roast-meat techniques while keeping the preparation simple and flavorful.
Benefits
Pork loin is a good source of high-quality protein, which supports muscle maintenance and tissue repair. It also provides nutrients such as thiamine, selenium, zinc, and vitamin B6. Rosemary, garlic, and parsley contribute additional plant compounds and flavor, allowing the dish to achieve a rich taste without relying heavily on sauces.
For a balanced meal, pair the pork with plenty of vegetables and a whole-grain or potato side. Portion size and the amount of added oil or salt can significantly affect the overall nutritional value.
