
Ingredients:
- 12 ripe bananas (mashed)
- 12 large eggs
- 4 cups (900 g) butter or margarine, softened
- 6 cups (1.2 kg) granulated sugar
- 8 cups (1 kg) all-purpose flour
- 8 tsp baking soda
- 4 tsp baking powder
- 4 tsp salt
- 8 tsp vanilla extract
- 4 cups (480 g) chopped walnuts or pecans (optional)
- 4 cups (680 g) chocolate chips or raisins (optional)
Instructions:
- Prepare pans: Preheat oven to 350°F (175°C). Grease 6–8 medium foil loaf pans.
- Mix wet ingredients: In a very large mixing bowl, cream together butter and sugar until light and fluffy. Add eggs one at a time, then stir in mashed bananas and vanilla.
- Mix dry ingredients: In another large bowl, whisk together flour, baking soda, baking powder, and salt.
- Combine: Gradually add the dry mixture into the wet mixture. Stir until just combined (don’t overmix). Fold in nuts, chocolate chips, or raisins if using.
- Fill pans: Divide the batter evenly among the loaf pans (about ¾ full).
- Bake: Place on the middle rack and bake for 55–65 minutes, or until a toothpick inserted comes out clean.
- Cool: Allow to cool in pans for 10 minutes, then transfer to a wire rack to finish cooling.

- Brush the tops with melted butter and sprinkle with brown sugar before baking for a caramelized crust.
