Ingredients:
- 2 large onions
- 2 teaspoons of butter or lard
- 1 teaspoon caraway seeds
- 2 tablespoons paprika
- 1/4 cup wheat flour
- 1 pound stewing beef, cut into 1-inch cubes and trimmed
- 2 cups water or beef broth
- 1 cup diced canned tomatoes
- 1 teaspoon salt
- 1/4 teaspoon pepper
- Optional: 1/2 cup diced carrots
- Optional: 3 cups diced potatoes
Instructions:
- In a large pot, melt the butter or lard over medium heat. Add the onions and cook until they become translucent.
- Stir in the caraway seeds and paprika, ensuring they are well mixed with the onions.
- In a bowl, coat the cubed stewing beef with wheat flour, shaking off any excess.
- Add the floured beef to the onions in the pot. Sauté for about 2 to 3 minutes, allowing the meat to brown slightly.
- Slowly pour about 1/4 cup of the beef broth into the pot, stirring to deglaze the bottom and release any browned bits.
- Add the remaining beef broth, diced tomatoes, and if desired, diced potatoes and carrots.
- Season the mixture with salt and pepper, stirring to combine all the ingredients.
- Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let the goulash simmer for about 1 1/2 to 2 hours, or until the beef is tender and the vegetables are soft.
- Stir the goulash occasionally to prevent sticking and ensure even cooking.
- Once the goulash is cooked to your desired tenderness, adjust the seasoning if needed.
