Soup Cabbage Rolls:
Ingredients:
For the cabbage rolls:
- 1 large head of cabbage
- 1 lb ground beef
- 1/2 lb ground pork
- 1 cup cooked rice
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 egg
- 1/4 cup milk
- Salt and pepper to taste
- 1 teaspoon paprika
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried oregano
- 1/4 teaspoon cayenne pepper (optional)
- 2 tablespoons chopped fresh parsley
- 1 can (14 oz) tomato sauce
For the soup:
- 6 cups beef broth
- 1 can (14 oz) diced tomatoes
- 2 carrots, diced
- 2 celery stalks, diced
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bay leaf
- Salt and pepper to taste
- Chopped fresh parsley for garnish
Instructions:
- Prepare the cabbage:
- Bring a large pot of water to a boil. Carefully peel off the cabbage leaves, one at a time, and blanch them in the boiling water for about 2-3 minutes until they are softened. Remove and set aside to cool.
- Make the filling:
- In a large bowl, combine the ground beef, ground pork, cooked rice, chopped onion, minced garlic, egg, milk, salt, pepper, paprika, thyme, oregano, cayenne pepper (if using), and chopped parsley. Mix well until everything is thoroughly combined.
- Assemble the cabbage rolls:
- Take a cabbage leaf and place a spoonful of the meat mixture in the center. Fold the sides of the leaf over the filling, then roll it up tightly to enclose the filling. Repeat with the remaining cabbage leaves and filling.
- Prepare the soup:
- In a large soup pot, combine the beef broth, diced tomatoes (with their juice), diced carrots, diced celery, diced onion, minced garlic, and bay leaf. Season with salt and pepper to taste. Bring to a boil over medium-high heat.
- Cook the cabbage rolls
- Carefully place the cabbage rolls into the simmering soup. Reduce the heat to low, cover, and let simmer for about 45-60 minutes, or until the cabbage rolls are cooked through and tender.
- Serve:
- Once the cabbage rolls are cooked, remove the bay leaf from the soup. Ladle the soup into bowls, placing 1-2 cabbage rolls in each bowl. Garnish with chopped fresh parsley before serving.
