Fiesta Fusion Casserole

☆Ingredients:

1 can (15 oz) corn, drained
1 can (15 oz) diced tomatoes, undrained
1 cup salsa
1 teaspoon ground cumin
1 teaspoon chili powder
Salt and pepper to taste
12 corn tortillas
2 cups shredded Mexican cheese blend
Freshly chopped cilantro (for garnish)
1 pound ground beef or turkey
1 finely chopped onion
2 cloves minced garlic
1 can (15 oz) black beans, drained and rinsed

Sour Cream Sauce:

1 cup sour cream
1 tablespoon lime juice
1 teaspoon cumin
Salt to taste

☆Instructions:

Preheat: Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish.

Cook Meat Mixture: In a large skillet over medium heat, brown ground beef or turkey. Add chopped onions and garlic, sauté until fragrant.

Create Flavorful Mix: Stir in black beans, corn, diced tomatoes, salsa, cumin, chili powder, salt, and pepper. Let it simmer for 10 minutes for the flavors to meld.

Prepare Sour Cream Sauce: In a separate bowl, combine sour cream, lime juice, cumin, and salt to create the zesty sour cream sauce.

Layering Time: Place a layer of corn tortillas at the bottom of the baking dish. Spoon a portion of the meat mixture over the tortillas, drizzle with sour cream sauce, and sprinkle with shredded cheese. Repeat these layers, finishing with a cheese layer on top.

Bake to Perfection: Bake in the preheated oven for 25-30 minutes or until bubbly and golden.

Garnish and Serve: Sprinkle freshly chopped cilantro over the casserole before serving. Slice, serve, and relish in the Fiesta Fusion Casserole!
