Crispy Fried Catfish Delight with Golden French Fries

Ingredients:
- 4 catfish fillets
- 1 cup cornmeal
- 1/2 cup all-purpose flour
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper (optional)
- Salt and pepper to taste
- Vegetable oil for frying
- 4 large potatoes, peeled and cut into fries
- Salt for seasoning
Instructions:
- Begin by preparing the french fries. Rinse the cut potatoes under cold water to remove excess starch. Pat them dry with a kitchen towel.
- Heat vegetable oil in a deep fryer or large pot to 375°F (190°C).
- Carefully add the potato fries to the hot oil in batches, frying until they are golden brown and crispy, about 5-7 minutes per batch. Remove them from the oil using a slotted spoon and place them on a paper towel-lined plate to drain. Season with salt while they are still hot.
- In a shallow dish, combine the cornmeal, flour, garlic powder, paprika, cayenne pepper (if using), salt, and pepper.
- Dredge each catfish fillet in the cornmeal mixture, coating it evenly on all sides.
- Shake off any excess coating and carefully place the coated catfish fillets into the hot oil.
- Fry the catfish fillets for about 4-5 minutes on each side, or until they are golden brown and crispy.
- Once cooked, remove the catfish from the oil and place them on a paper towel-lined plate to drain any excess oil.
- Serve the crispy fried catfish hot alongside the golden french fries.
