Big Batch Healing Vegetable Soup

Ingredients:

  • 2 tbsp olive oil (or avocado oil)
  • 2 large onions, chopped
  • 2 leeks, trimmed, sliced, and well-rinsed
  • 4 stalks celery, chopped
  • 3 large carrots, diced
  • 2 red bell peppers, diced
  • 1 zucchini, chopped
  • 1 yellow squash, chopped
  • 3 cloves garlic, minced
  • 2 cups green cabbage, shredded
  • 1½ cups cauliflower florets (or broccoli)
  • 1 can (14 oz) diced tomatoes
  • 1½ cups cooked white beans (or chickpeas/lentils)
  • 6–7 cups vegetable broth (low sodium if preferred)
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1 tsp turmeric powder (anti-inflammatory)
  • ½ tsp smoked paprika (optional, for warmth)
  • 1 bay leaf
  • Salt & pepper, to taste
  • Juice of 1 lemon (for brightness)
  • Fresh parsley or dill, chopped (for serving)

Instructions:

  1. Sauté the aromatics:
    In a very large soup pot, heat the olive oil over medium heat. Add onions, leeks, celery, and carrots. Sauté for 6–8 minutes until softened.
  2. Add the rest of the veggies:
    Stir in garlic, bell peppers, zucchini, squash, cabbage, and cauliflower. Cook another 5–7 minutes, stirring occasionally.
  3. Spices and tomatoes:
    Add the turmeric, thyme, oregano, smoked paprika (if using), salt, and pepper. Stir well. Then add the canned tomatoes (with their juices).
  4. Pour in broth + simmer:
    Add the vegetable broth and bay leaf. Bring everything to a boil, then reduce the heat. Simmer gently for 30 minutes, partially covered.
  5. Add beans + final touches:
    Stir in the cooked beans. Simmer another 10 minutes until all vegetables are soft and flavorful.
  6. Finish with freshness:
    Remove bay leaf. Squeeze in fresh lemon juice. Taste and adjust seasoning.
  7. Serve hot, topped with parsley or dill.

Optional Add-Ins:

  • Add 1 cup chopped spinach or kale at the end
  • Stir in ½ cup cooked rice or quinoa
  • A few chili flakes for heat
  • A spoon of sauerkraut juice for gut health
