Ingredients
2 cups (200 g) rolled oats, blended into a coarse flour
1 teaspoon baking powder
1 cup (240 ml) milk of your choice
1 carrot, finely grated
1 apple, grated or finely chopped
9 dried apricots, rinsed with hot water and chopped
4 tablespoons raisins, rinsed with hot water

Instructions
Preheat your oven to 180°C (350°F) and lightly grease a baking dish or line it with parchment paper.
Blend the rolled oats in a blender until they resemble a coarse flour.
In a large bowl, combine the oat flour and baking powder.
Add the milk and mix well until you get a thick batter.
Stir in the grated carrot, apple, chopped apricots, and raisins. Mix until everything is evenly combined.
Pour the mixture into your prepared baking dish and spread it evenly.
Bake for 35–40 minutes, or until the top is golden and a toothpick inserted in the center comes out clean.
