
Ingredients
For the Cake Base:
- 1 box white cake mix (plus ingredients listed on the box: usually eggs, oil, water)
- 1 can (20 oz) crushed pineapple (with juice)
- 1 cup granulated sugar
For the Frosting:
- 1 package (8 oz) cream cheese, softened
- ½ cup (1 stick) unsalted butter, softened
- 3½ cups powdered sugar (confectioners’ sugar)
- 1 tsp vanilla extract
For Topping & Layers:
- 1 cup chopped pecans or walnuts (reserve some whole for garnish)

Instructions
- Prepare the Cake Base:
- Preheat oven to 350°F (175°C).
- Grease and flour a 9×13-inch baking pan.
- Prepare the cake mix according to package directions. Bake until golden and a toothpick inserted in the center comes out clean (about 25–30 minutes).
- Remove from oven and let it cool slightly.
- Pineapple Mixture:
- In a medium saucepan, combine the crushed pineapple (with juice) and granulated sugar.
- Bring to a gentle boil, stirring occasionally, for about 5 minutes.
- While the cake is still warm, poke holes all over with a fork or skewer.
- Pour the hot pineapple mixture evenly over the cake. Let it soak in and cool completely.
- Cream Cheese Frosting:
- In a large bowl, beat softened cream cheese and butter until smooth and fluffy.
- Gradually add powdered sugar, beating until creamy.
- Mix in vanilla extract.
- Assemble the Cake:
- Spread the cream cheese frosting over the cooled, pineapple-soaked cake.
- Sprinkle with chopped pecans or walnuts.
- For a layered effect (like in your picture), you can slice the cake horizontally or bake two thinner cakes and stack them with frosting, pineapple, and nuts in between.
- Chill & Serve:
- Refrigerate for at least 2–3 hours before serving. This helps the flavors meld together.
- Garnish with whole pecans or extra whipped cream swirls on top.
