  • 1 tablespoon ground nutmeg
  • 1 tablespoon ground black pepper
  • 2 teaspoons salt
  • Juice of 2 limes

Optional Sauce:

  • 1/2 cup pineapple juice
  • 1/4 cup ketchup
  • 1 tablespoon brown sugar
  • 1 teaspoon soy sauce

Preparing the Jerk Marinade:

    • In a blender or food processor, combine chopped onion, green onions, garlic, ginger, Scotch bonnet pepper, thyme, soy sauce, olive oil, brown sugar, allspice, cinnamon, nutmeg, black pepper, salt, and lime juice. Blend until you achieve a smooth marinade.
  2. Marinating the Pork:
    • Place the pork shoulder in a large bowl or resealable plastic bag. Pour the jerk marinade over the pork, ensuring it is evenly coated. Massage the marinade into the meat. Marinate in the refrigerator for at least 4 hours, preferably overnight.

Cooking the Jerk Pork:

    • Preheat your oven to 350°F (175°C).
  2. Preparing Roasting Pan:
