Let’s kick off the middle of the week with these vegan snickerdoodle cupcakes. Ultra soft, super crispy on the outside, preferably warm :). Perfect for when you’re hungry, for breakfast or for anyone who loves muffins in general. Thanks to the scents associated with this season, it will be your ally for autumn. cinnamon and vanilla.

How can you describe these vegan cupcakes? First, I think there’s a layer of cinnamon sugar that caramelizes and adds an unstoppable crunch as it cooks. It’s definitely soft on the inside, but the consistency reminds me a little of Canelés, albeit without any flavor. A little “egg” on this side and very moist. I think with a different recipe one could possibly make a canelé recipe.

And considering that we are leaving in a few days in 2023!!! Do you have something planned? Not really, I think it’s going to be a quiet evening with a good meal.But let the time pass. And to start the new year off right, there’s nothing better than a vegan muffin recipe. I haven’t made muffins in a long time, so I wanted to fix that with today’s recipe.

INGREDIENTS

200g flour (1 3/4 cups all-purpose flour)
1 tablespoon cornstarch (1 tablespoon cornstarch)
1 teaspoon baking powder (1 teaspoon baking powder)
80g sugar (1/3 cup brown sugar)
120 g vegan yogurt (1 cup vegan yogurt)
240 ml plant-based milk (1 cup plant-based milk)
1 teaspoon apple cider vinegar (1 teaspoon apple cider vinegar)
110 ml coconut oil, melted (1/2 cup coconut oil, melted)
1 Teaspoon vanilla (1 teaspoon vanilla extract)
50g sugar + 2 teaspoons cinnamon (1/4 cup sugar + 2 teaspoons cinnamon)
INSTRUCTIONS

1- Preheat the oven to 180°C and prepare a muffin tin .

2- Mix the vinegar and soy milk in a bowl and leave for 5 minutes.

3- Place all dry ingredients in a bowl and mix. Then add the liquids. Stir again to mix everything without

mixing too much.

4- Fill the muffin cases with a scoop of ice cream.

5- Sprinkle each muffin with sugar and cinnamon.

6-Bake 15-20 minutes or until golden brown and the tip of a toothpick comes out dry.

7- Put them on a rack and let them cool.
