Apple-Pecan Cake with Caramel Glaze

Ingredients

For the Cake:

2 cups granulated sugar
1 cup vegetable oil
3 large eggs
3 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
1 teaspoon vanilla extract
2 cups peeled and chopped apples (preferably tart apples)
1 cup chopped pecans
For the Caramel Glaze:

1 cup packed brown sugar
1/2 cup unsalted butter
1/4 cup milk
1 teaspoon vanilla extract

Instructions

Prepare the Cake:

Preheat the oven: Set your oven to 325°F (165°C).

Mix wet ingredients: In a large mixing bowl, whisk together the eggs, sugar, and vegetable oil until the mixture is smooth and well combined.

Combine dry ingredients: In a separate medium-sized bowl, sift together the flour, baking soda, cinnamon, and salt. Gradually add the dry mixture to the wet mixture, stirring until everything is thoroughly combined.

Add flavor: Stir in the vanilla extract until it’s well incorporated into the batter.

Fold in apples and pecans: Gently fold the chopped apples and pecans into the batter until evenly distributed.

Prepare the pan: Grease and flour a tube pan or two loaf pans. Pour the batter into the prepared pan(s), spreading it evenly.

Bake: Place the pan(s) in the preheated oven and bake for approximately 1 hour. After about 50 minutes, start checking the cake by inserting a toothpick into the center. If it comes out clean, the cake is done.

Make the Caramel Glaze:

Melt the butter: In a small saucepan, melt the butter over low heat.

Add sugar and milk: Stir in the brown sugar and milk, then bring the mixture to a boil over low heat.

Simmer: Let the mixture simmer, stirring occasionally, for about 10 minutes.

Finish the glaze: Remove the saucepan from the heat, then whisk in the vanilla extract. Allow the glaze to cool slightly.

Glaze the cake: Once the cake has cooled, pour the caramel glaze over the top, allowing it to drizzle down the sides.
