My husband and I enjoy the convenience of frozen breakfast sandwiches from the grocery store, but they can get pretty pricey for only four sandwiches per box. To save money and have more control over the ingredients, I decided to make my own. It turned out to be super easy and much cheaper! Here’s how I made delicious breakfast sandwiches with eggs, pork sausage patties, English muffins, and sliced cheese for about $10 to make a dozen.

Ingredients:

  • Eggs
  • Pork sausage patties (Kroger brand)
  • English muffins
  • Sliced cheese
  • Olive oil (for coating the molds)
  • Salt and pepper (to taste)

Instructions:

  1. Prepare the Molds: Start by preheating your oven to 350°F (375°F if you’re using convection). Coat the molds with olive oil to prevent sticking. You can use muffin tins or any other mold you have on hand.
  2. Cook the Eggs: Crack an egg into each mold. If you prefer your eggs with a runny yolk, bake them for a shorter time. For fully cooked yolks, bake at 350°F (375°F convection) for 17 minutes. Sprinkle with salt and pepper to taste before baking.
  3. Cook the Sausage Patties: While the eggs are baking, cook the pork sausage patties. I used the Kroger brand and cooked them in the oven on a sheet pan until they were fully cooked. You can also cook them on the stovetop if you prefer.
  4. Assemble the Sandwiches: Once the eggs and sausage patties are cooked, it’s time to assemble the sandwiches. Split the English muffins and toast them if you like. Place a cooked egg, a sausage patty, and a slice of cheese between the muffin halves.
  5. Store and Reheat: Wrap each assembled sandwich in a paper towel and place them in an airtight container or a freezer bag. They can be stored in the refrigerator or freezer. To reheat, microwave the sandwich wrapped in a paper towel for 1 minute and 30 seconds. I’ve found that this method prevents the sandwiches from drying out.
