Vanilla Cake
4 large eggs
1 cup white sugar
1¾ cup flour
¾ cup milk
¼ tsp salt
1 tsp vanilla essence
½ cup oil
½ tbs baking powder (7,5mls)
- Preheat oven @160°C
- In a seperate bowl sift in flour and baking powder
- In another bowl add eggs, salt, vanilla, sugar and whip on high speed until very fluffy, thick, pale in colour and voluminous about 6 to 8 minutes.
- Reduce mixer to low and add oil, mix
- With mixer still on low add milk
- Sift in the flour and baking powder mixture, mix on low until just combined. Finish mixing with a spatula, gently folding , mixing from the bottom of the bowl.
- Divide the batter equally in 2, 8 inch pans
- Tap the pans 3 times to remove air bubbles before baking
Bake in a preheated oven for about 30 to 33minutes.
NOTE: Step 3 is very important. Sponge cakes get all their volume from eggs so do it well.
