Chicken and Marinade

Ingredients:

  • Chicken and Marinade:
  • 1 lb (450g) fresh chicken legs, cut into pieces
  • 1 tablespoon cooking wine
  • 1 tablespoon starch (cornstarch or potato starch)
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • Sauce:
  • 2 tablespoons light soy sauce
  • 1 tablespoon oyster sauce
  • ½ tablespoon white sugar
  • Other Ingredients:
  • 3-4 green onions, chopped
  • 2 tablespoons cooking oil

Instructions:

  1. Prepare the Chicken:
  • Cut the chicken legs into bite-sized pieces.
  • In a bowl, add the chicken pieces, cooking wine, starch, salt, and black pepper. Mix well to coat the chicken evenly.
  • Let the chicken marinate for 21 minutes.
  1. Prepare the Sauce:
  • In a small bowl, mix together the light soy sauce, oyster sauce, and white sugar. Set aside.
  1. Cook the Chicken:
  • Heat the cooking oil in a large pan over medium-high heat.
  • Once the oil is hot, add the marinated chicken pieces.
  • Stir-fry the chicken until it turns golden brown on all sides.
  1. Add the Sauce:
  • Pour the prepared sauce over the chicken.
  • Continue to stir-fry until the sauce is well mixed with the chicken and starts to thicken.
  1. Add Green Onions:
  • Add the chopped green onions to the pan.
  • Stir-fry for about 1-2 minutes until the green onions are evenly distributed and slightly wilted.
  1. Simmer:
  • Cover the pan and let it simmer for 1 minute to allow the flavors to meld together.
  1. Serve:
  • Remove the cover, give the dish a final stir, and serve hot.
