Baked Mozzarella Chicken Rolls

Ingredients:

4 boneless, skinless chicken breasts
Salt and pepper, to taste
4 slices mozzarella cheese
1 cup marinara sauce
1/2 cup breadcrumbs
1/4 cup grated Parmesan cheese
1/4 cup chopped fresh parsley
Olive oil, for brushing
Directions:

Preheat oven to 375°F (190°C)
Place each chicken breast between two sheets of plastic wrap and pound to an even thickness. Season with salt and pepper.
Place a slice of mozzarella cheese on top of each chicken breast.
Roll up the chicken breasts and secure with toothpicks, if needed.
Spread marinara sauce in the bottom of a baking dish. Place the chicken rolls seam side down in the dish
In a small bowl, combine breadcrumbs, grated Parmesan cheese, and chopped parsley. Sprinkle the mixture over the chicken rolls.
Lightly brush the tops of the chicken rolls with olive oil.
Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the cheese is melted and bubbly
Serve hot and enjoy
