Ingredients:
- 10 ounces (0.38 kg) (0.38 kg) (0.38 kg) of angel food cake, cut into 1 to 1 1/2-inch cubes
- 8 ounces (0.3 kg) (0.3 kg) of Neuchatel cheese, cream cheese, or Mascarpone cheese
- 1/2 cup of granulated white sugar
- 1 teaspoon of vanilla extract
- 1 tablespoon of freshly squeezed lemon juice
- 2 pounds (0.91 kg) of strawberries, plus extra for garnish
- 6 ounces (0.23 kg) of blackberries, plus extra for garnish
- 6 ounces (0.23 kg) (0.23 kg) (0.23 kg) (0.23 kg) of raspberries, plus extra for garnish
- 3.4-ounce package of Vanilla-flavored Instant Jello pudding
- 2 cups (0.47 l) of cold milk
- 8 ounces (0.3 kg) of Cool Whip or freshly whipped cream
- Fresh mint leaves (optional)
Instructions:
Preparing the Pudding:
- In a medium mixing bowl, pour 2 cups (0.47 l) of cold milk and add the instant vanilla pudding mix. Whisk the mixture together for about 2 minutes until well combined. Set it aside for 5 minutes to set in the refrigerator.
Preparing the Cream Cheese Layer: 2. In a medium-large mixing bowl, combine the Neuchatel/cream cheese, 1/2 cup of sugar, 1 teaspoon of pure vanilla extract, and the lemon juice. Use a hand-held electric mixer to blend the ingredients until they are thoroughly combined. Set the mixture aside.
Assembling the Trifle: 3. Begin by arranging half of the angel food cake cubes on the bottom of the trifle container.
- Next, create an even layer with slightly less than one-third of the strawberries, blackberries, and raspberries. If you’re using a clear glass trifle container, consider alternating the arrangement of blackberries and red berries for an appealing pattern.
- Spread half of the Neuchatel/cream cheese mixture over the berries. Use an offset spatula or a baking spatula to distribute it evenly.
- Follow this with half of the vanilla pudding mixture, spreading it evenly over the layer.
- Repeat the layering process, so you end up with two layers each of angel food cake, berries, cream cheese, and vanilla pudding. There should be three layers of mixed berries.
- For the final layer of berries, create a “pillow” in the center using Cool Whip. You can use an offset spatula or a baking spatula for this. Garnish the “pillow” with the remaining berries and, optionally, mint sprigs.
- Serve the trifle in individual parfait glasses for an elegant presentation.
