Ingredients:

Instructions:

  1. Preparing the Potatoes:
    Begin by peeling and chopping the potatoes into chunks. Place the chopped potatoes in a suitable saucepan, cover them with enough water, and bring to a boil. Cook until the potatoes are soft and tender. Once boiled, drain the water and transfer the potatoes to a large mixing bowl. Use a potato masher or fork to crush the potatoes into a smooth puree.
  2. Mixing the Ingredients:
    To the potato puree, add finely chopped parsley, a pinch of red pepper for some heat, 100 grams of cornstarch, a generous amount of salt to taste, and grated cheddar cheese. Mix these ingredients thoroughly until well combined. The cornstarch helps bind the mixture, while the cheese adds a rich, savory flavor.
  3. Forming the Dough:
    Once the mixture is well-kneaded, divide the dough into two equal portions. Roll each portion into a ball (meringue). Using a rolling pin, flatten each ball into a thin, even sheet. If the dough is too sticky, you can lightly dust the surface with cornstarch to prevent sticking.
  4. Cutting and Frying:
    With a sharp knife or a kitchen cutter, slice the dough sheets into thin strips, resembling traditional French fries. Heat a generous amount of oil in a deep frying pan over medium-high heat. Once the oil is hot, carefully add the potato strips in batches, ensuring not to overcrowd the pan. Fry until they turn golden brown and crispy, turning occasionally for even cooking.
  5. Serving:
    Remove the fries from the oil using a slotted spoon and place them on a plate lined with paper towels to drain excess oil.
