Borek (Potato Pastry) Recipe

Ingredients:

For the Borek:

  • 4 sheets of phyllo dough
  • 1 cup of oil

For the Filling:

  • 5 boiled potatoes
  • 1 onion
  • 1/2 cup of oil
  • 1 teaspoon of salt
  • 1 teaspoon of tomato paste
  • 1 teaspoon of chili flakes
  • 1 teaspoon of black pepper
  • 1 teaspoon of paprika

Instructions:

  1. Prepare the Filling:
  • Heat 1/2 cup of oil in a suitable pan. Add the chopped onion and sauté until translucent.
  • Add the tomato paste, salt, chili flakes, black pepper, and paprika. Sauté until the tomato paste’s aroma is released.
  • Mash the boiled potatoes in a bowl. Add the sautéed onion mixture and mix well until it reaches a mashed consistency.
  1. Assemble the Borek:
  • Lay the first sheet of phyllo dough on a clean counter. Brush it with oil.
  • Fold all four sides of the dough inward to form a square.
  • Spread a portion of the potato filling evenly over the dough.
  • Roll the dough up tightly and cut it into even slices.
  1. Bake the Borek:
  • Place the borek slices on a baking sheet lined with parchment paper.
  • Brush the tops with oil.
  • Bake in a preheated oven at 180°C (350°F) until golden brown.
  1. Serve:
  • Allow the borek to cool slightly before serving.
