Garlic Roasted Chicken and Potatoes

Ingredients

  • ¼ cup of butter
  • 6 chicken leg quarters, split into drumsticks and thighs
  • 6 large Yukon Gold potatoes, cut into chunks
  • 24 cloves of garlic, unpeeled
  • Salt and freshly ground black pepper, to taste
  • ¼ cup of maple syrup

How To Make Garlic Roasted Chicken and Potatoes

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
  2. Place the butter into a roasting pan and allow it to melt in the oven. Once the butter is completely melted, swirl it around to coat the bottom of the roasting pan. Add the chicken drumsticks, thighs, potatoes, and unpeeled garlic cloves to the pan. Sprinkle with salt and freshly ground black pepper. Turn the chicken, potatoes, and garlic to ensure they are evenly coated with the melted butter.
  3. Bake in the preheated oven until the chicken is no longer pink inside and the juices run clear, which should take about 40 minutes. Baste the contents of the pan three times with the drippings.
  4. Brush the maple syrup over the chicken pieces, and spoon the pan drippings over the potatoes.
  5. Return the pan to the oven and bake until the chicken and potatoes are tender and nicely browned, which should take approximately 20 more minutes. To check if the chicken is done, you can insert an instant-read thermometer into a thick part of a thigh; it should read at least 165 degrees Fahrenheit (74 degrees Celsius).
  6. To serve, squeeze the garlic from the roasted cloves and spread the softened garlic over the chicken. Pour the pan juices over the chicken and potatoes.
