Skillet-Fried Potatoes, Onions, and Smoked Polish Sausage

Ingredients:

  • 1½ pounds of russet potatoes, diced into 1/2″ cubes
  • 1 pound (0.45 kg) of sliced smoked sausage
  • 2 tablespoons of olive oil
  • ½ teaspoon of seasoned salt
  • ½ teaspoon of Italian seasoning
  • ½ large red bell pepper
  • ½ large green bell pepper
  • 1 small diced onion
  • Black pepper to taste
  • Shredded Parmesan cheese for garnish

How To Make Fried Potatoes, Onions, and Smoked Polish Sausage:

  1. In a large pan, sauté the onion in a tablespoon of butter over medium heat until the onion is translucent.
  2. Cook the onion until it is soft, then remove it from the pan and set it aside.
  3. In a large skillet, heat 1 tablespoon of butter and 1 tablespoon of olive oil until the butter is melted. Add the diced potatoes, seasoned salt, Italian seasoning, and black pepper.
  4. Cover and simmer, turning occasionally, for 15 minutes or until the vegetables are somewhat softened.
  5. Cook for an additional 10 minutes after adding the sausage. Combine the sautéed onions and peppers in the skillet and cook until the peppers are slightly softened.
  6. If desired, sprinkle shredded Parmesan cheese on top.

COOKING NOTE: Cook the sausage in a separate pan over medium-high heat until it is crispy while the potatoes are cooking, if you prefer a crisper sausage.
