Ingredients:
- 1½ pounds of russet potatoes, diced into 1/2″ cubes
- 1 pound (0.45 kg) of sliced smoked sausage
- 2 tablespoons of olive oil
- ½ teaspoon of seasoned salt
- ½ teaspoon of Italian seasoning
- ½ large red bell pepper
- ½ large green bell pepper
- 1 small diced onion
- Black pepper to taste
- Shredded Parmesan cheese for garnish
How To Make Fried Potatoes, Onions, and Smoked Polish Sausage:
- In a large pan, sauté the onion in a tablespoon of butter over medium heat until the onion is translucent.
- Cook the onion until it is soft, then remove it from the pan and set it aside.
- In a large skillet, heat 1 tablespoon of butter and 1 tablespoon of olive oil until the butter is melted. Add the diced potatoes, seasoned salt, Italian seasoning, and black pepper.
- Cover and simmer, turning occasionally, for 15 minutes or until the vegetables are somewhat softened.
- Cook for an additional 10 minutes after adding the sausage. Combine the sautéed onions and peppers in the skillet and cook until the peppers are slightly softened.
- If desired, sprinkle shredded Parmesan cheese on top.
COOKING NOTE: Cook the sausage in a separate pan over medium-high heat until it is crispy while the potatoes are cooking, if you prefer a crisper sausage.
