Ingredients:
For the Steak:
- 1.5 lbs NY strip steak, thinly sliced
- 1 tbsp Olive oil
- 3 cloves Garlic, minced
- 1 tsp Oregano
- 1 tsp Thyme
- 1 tsp Rosemary
- Salt and pepper, to taste
For the Potatoes:
- 1.5 lbs Baby golden potatoes, quartered or halved
- 2 tbsp Butter, unsalted
- 3 cloves Garlic, minced
- 1 tsp Oregano
- 1 tsp Thyme
- 1 tsp Rosemary
- Salt and pepper, to taste
Instructions:
- In a skillet over medium-high heat, add the olive oil and half of the minced garlic for the steak. Sauté for a minute until fragrant.
- Add the thinly sliced steak to the skillet and sprinkle with oregano, thyme, rosemary, salt, and pepper. Cook the steak, stirring occasionally, until it reaches your desired level of doneness. Transfer the cooked steak to a plate and set aside.
- In the same skillet, melt the butter over medium heat. Add the remaining minced garlic and sauté for about 30 seconds until fragrant.
- Add the quartered or halved baby golden potatoes to the skillet. Sprinkle with oregano, thyme, rosemary, salt, and pepper. Cook the potatoes, stirring often, until they are fork-tender and slightly golden.
- Return the cooked steak to the skillet with the potatoes to reheat.
- Taste and adjust the seasoning if needed.
- Serve the garlic herb steak and potato skillet hot, garnished with fresh herbs if desired.
