Summer Berry Spinach Salad

Ingredients:

• 6 cups fresh baby spinach
• 1 cup fresh strawberries, hulled and sliced
• 1/2 cup fresh blueberries
• 1/2 cup fresh raspberries
• 1/4 cup crumbled feta cheese
• 1/4 cup sliced almonds, toasted
• 1/4 small red onion, thinly sliced

For the Dressing:

• 1/4 cup extra virgin olive oil
• 2 tablespoons balsamic vinegar
• 1 tablespoon honey
• 1 teaspoon Dijon mustard
• Salt and pepper to taste

Instructions:

1. Prepare the Salad:
   • In a large salad bowl, combine the spinach, strawberries, blueberries, raspberries, red onion, and feta cheese.
2. Toast the Almonds:
   • In a small skillet over medium heat, toast the sliced almonds until golden brown, stirring occasionally. Be careful not to burn them.
3. Make the Dressing:
   • In a small bowl, whisk together the olive oil, balsamic vinegar, honey, Dijon mustard, salt, and pepper until well combined.
4. Assemble the Salad:
   • Pour the dressing over the salad and toss gently to combine. Sprinkle the toasted almonds on top.
5. Serve:
