Southern Pineapple Cake: A Slice of Southern Paradise

Ingredients:
For the Pineapple Cake Layers:

  • 2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup vegetable oil
  • 1 cup canned crushed pineapple, undrained

  • 1/2 cup unsalted butter, softened
  • 8 ounces cream cheese, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup canned crushed pineapple, drained

For Garnish (Optional):

  • Fresh pineapple slices
  • Maraschino cherries
  • Toasted coconut flakes

Instructions:

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour three 9-inch round cake pans, or line them with parchment paper for easy removal.
  2. Prepare the Pineapple Cake Batter: In a large mixing bowl, combine the flour, sugar, baking powder, baking soda, and salt.
