Ingredients:

  • 2 teaspoons of kosher coarse salt (*refer to notes)
  • 2 teaspoons of brown sugar
  • 1/4 teaspoon of cornstarch
  • 1/4 teaspoon of garlic powder
  • 1/4 teaspoon of garlic salt
  • 1/4 teaspoon of onion powder
  • 1/4 teaspoon of turmeric
  • 1/2 teaspoon of paprika
  • 1/2 teaspoon of chili powder
  • 1 teaspoon of black pepper

Instructions:

  1. Combine all the ingredients in a zip-top bag (quarter-liter size) and seal it tightly. Shake the bag vigorously to ensure all the ingredients are thoroughly mixed.
  2. Generously coat each side of the steak with the spice mixture and allow them to rest for approximately 40 minutes. This resting time permits the salt to permeate the surface of the meat through osmosis, effectively breaking down muscle fibers and resulting in more tender meat. Additionally, it allows any released liquid to reabsorb, enhancing the meat’s juiciness.
  3. Preheat your grill until it reaches the desired temperature. Once it’s nice and hot, place the steak(s) on the grill.
  4. Grill the steak(s) for 4–5 minutes, or until they are browned and slightly charred. Flip the steak and cook for an additional time, depending on your preferred level of oneness:
    • +5 minutes: for Medium Rare
    • +7 minutes: for Medium
    • +10 minutes: for Well Done
  5. Enjoy your delicious steak!
