  • 2 large onions, thinly sliced: Adds sweetness and depth.

  • 1/2 cup plain yogurt: Tenderizes the chicken and adds creaminess.

Oils & Pastes

  • 1/4 cup vegetable oil or ghee: Ghee gives a richer flavor.
  • 2 teaspoons ginger-garlic paste: Essential for authentic taste.
  • 2 green chilies, slit: Adds a subtle heat.

Herbs

  • 1/4 cup fresh cilantro, chopped: Adds a fresh, herbal note.
  • 1/4 cup fresh mint leaves, chopped: Gives a refreshing twist.

Spices

  • 1 teaspoon turmeric powder: For color and earthiness.
  • 2 teaspoons ground cumin: Adds a warm, nutty flavor.
  • 2 teaspoons ground coriander: Provides citrusy undertones.
  • 1 teaspoon garam masala: A blend of spices for warmth.
  • 1 teaspoon red chili powder: Adjust for heat preference.
  • 1 cinnamon stick: Sweet and woody.
  • 4-5 cloves: Adds a sweet, aromatic flavor.
  • 3-4 cardamom pods: For a sweet, floral taste.

  • 4 cups water: To cook the rice.
  • Saffron strands soaked in 2 tablespoons warm milk (optional): For a luxurious touch.
  • Fried onions for garnish (optional): Adds a crispy, sweet finish.

Directions

Preparation

1️⃣ Wash and soak the basmati rice: Rinse under cold water until the water runs clear. Soak in water for 30 minutes, then drain and set aside.

Cooking the Chicken

2️⃣ Heat oil or ghee in a large pot: Add the sliced onions and sauté until golden brown. Remove half of the onions and set aside for garnishing.

3️⃣ Add the ginger-garlic paste and green chilies: Sauté until the raw smell disappears.

4️⃣ Add the chicken pieces: Cook until they are lightly browned on all sides.

5️⃣ Stir in the tomatoes: Cook until they become soft and oil starts to separate from the mixture.

6️⃣ Mix in the yogurt: Combine well and cook for a few minutes.

7️⃣ Add the spices (turmeric, cumin, coriander, garam masala, and red chili powder): Stir well to coat the chicken evenly.

8️⃣ Toss in the cinnamon stick, cloves, cardamom pods, and bay leaf: Cook for a couple of minutes to release their aroma.

Cooking the Rice

9️⃣ Add the soaked and drained rice: Stir gently to mix with the chicken and spices.

🔟 Pour in 4 cups of water: Add salt to taste. Bring to a boil.
