Instruction

Ingredients

2 pounds potatoes, peeled and diced

2 cups cooked chicken, shredded or cubed

2 cups shredded cheddar cheese

1 cup mozzarella cheese, shredded

1 cup sour cream

1 can cream of chicken soup

1/2 cup whole milk

1 small onion, finely diced

2 cloves garlic, minced

2 tablespoons butter

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon paprika

Salt and black pepper to taste

2 tablespoons chopped fresh parsley

Method

Preheat the oven to 375°F (190°C). Grease a 9×13-inch baking dish.

Boil the diced potatoes in salted water for 8–10 minutes until just tender. Drain well.

In a large skillet, melt the butter over medium heat. Sauté the onion until softened, then add the garlic and cook for 1 minute.

In a large bowl, combine the cream of chicken soup, sour cream, milk, garlic powder, onion powder, paprika, salt, and pepper until smooth.

Add the cooked chicken, potatoes, sautéed onion mixture, half of the cheddar cheese, and half of the mozzarella. Stir gently until everything is evenly coated.

Transfer the mixture to the prepared baking dish and spread it evenly.

Sprinkle the remaining cheddar and mozzarella cheese over the top.

Bake for 30–35 minutes, or until the casserole is bubbling and the cheese is melted and golden brown.
