Chopped Cheese Loaded Burritos
Ingredients:
For the Burritos:
4 large flour tortillas
1 pound ground beef
1 tablespoon olive oil
1 large onion, chopped
1 green bell pepper, chopped
2 tomatoes, diced
1 teaspoon garlic powder
1 teaspoon paprika
Salt and black pepper to taste
1 cup shredded cheddar cheese
1 cup shredded lettuce
1/4 cup sour cream
1/4 cup salsa
Additional Toppings (Optional):
Jalapeños, sliced
Black olives, sliced
Fresh cilantro, chopped
Directions:
Cook the Beef:
Heat olive oil in a large skillet over medium heat.
Add the ground beef, breaking it up with a spatula. Cook until browned.
Stir in the onions, green bell pepper, garlic powder, paprika, salt, and black pepper. Cook until vegetables are softened, about 5-7 minutes.
Remove from heat and let cool slightly.
Assemble the Burritos:
Warm the flour tortillas in a dry skillet or microwave to make them pliable.
Down the center of each tortilla, layer the cooked beef mixture, diced tomatoes, shredded cheese, and shredded lettuce.
Add a dollop of sour cream and salsa over the toppings.
If desired, add jalapeños, black olives, and cilantro for extra flavor.
Roll the Burritos:
Fold the bottom of the tortilla up over the filling, then fold in the sides and roll tightly to close.
Serve:
Serve the burritos immediately, with additional salsa and sour cream on the side if desired.
