Chicken and Marinade

Ingredients:

  • Chicken and Marinade:
  • 1 lb (450g) fresh chicken legs, cut into pieces
  • 1 tablespoon cooking wine
  • 1 tablespoon starch (cornstarch or potato starch)
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • Sauce:
  • 2 tablespoons light soy sauce
  • 1 tablespoon oyster sauce
  • ½ tablespoon white sugar
  • Other Ingredients:
  • 3-4 green onions, chopped
  • 2 tablespoons cooking oil

Instructions:

  1. Prepare the Chicken:
  • Cut the chicken legs into bite-sized pieces.
  • In a bowl, add the chicken pieces, cooking wine, starch, salt, and black pepper. Mix well to coat the chicken evenly.
  • Let the chicken marinate for 21 minutes.
  1. Prepare the Sauce:
  • In a small bowl, mix together the light soy sauce, oyster sauce, and white sugar. Set aside.
  1. Cook the Chicken:
  • Heat the cooking oil in a large pan over medium-high heat.
  • Once the oil is hot, add the marinated chicken pieces.
  • Stir-fry the chicken until it turns golden brown on all sides.
  1. Add the Sauce:
  • Pour the prepared sauce over the chicken.
  • Continue to stir-fry until the sauce is well mixed with the chicken and starts to thicken.
  1. Add Green Onions:
  • Add the chopped green onions to the pan.
  • Stir-fry for about 1-2 minutes until the green onions are evenly distributed and slightly wilted.
  1. Simmer:
  • Cover the pan and let it simmer for 1 minute to allow the flavors to meld together.
  1. Serve:
  • Remove the cover, give the dish a final stir, and serve hot.

Additional Ingredients and Garnishes:

  1. Garlic and Ginger:
  • Adding minced garlic and ginger to the stir-fry can enhance the flavor. Add them right after the oil is heated and before adding the chicken.
  1. Vegetables:
  • You can include other vegetables like bell peppers, carrots, or snap peas for added color and nutrition. Stir-fry these vegetables before adding the chicken to the pan.
  1. Sesame Seeds:
  • Garnish the finished dish with toasted sesame seeds for a nice crunch and nutty flavor.
  1. Chili Flakes or Fresh Chilies:
  • If you like some heat, add chili flakes or sliced fresh chilies when you add the green onions.

Serving Suggestions:

  1. Rice:
  • Serve the braised chicken with steamed white rice, jasmine rice, or brown rice to soak up the flavorful sauce.
  1. Noodles:
  • This dish also pairs well with noodles. Stir-fry some noodles with a bit of soy sauce and serve the chicken on top.
  1. Side Dishes:
  • Consider serving with a side of steamed or stir-fried vegetables, such as broccoli, bok choy, or green beans.

  • Green tea or jasmine tea complements the flavors of the dish nicely.
  1. Beer:
  • A light, refreshing beer can be a great match, especially if you enjoy beer with your meals.
  1. Wine:

  1. Marination Time:
  • Marinating the chicken longer (up to a few hours) can enhance the flavor even more.
  1. Sauce Consistency:
  • If you prefer a thicker sauce, you can add a little cornstarch slurry (1 teaspoon cornstarch mixed with 1 tablespoon water) to the sauce while cooking.
  1. Balancing Flavors:
  • Taste the sauce before adding it to the chicken. If it’s too salty, add a bit more sugar or a splash of water. If it’s too sweet, add a bit more soy sauce.
