Chicken and Garlic Parmesan Rice Recipe

This Chicken with Garlic Parmesan Rice is an easy and quick dinner recipe with chicken tenders, white rice, and white wine. It’s an amazing weeknight dinner option that you can make using ingredients you likely have on hand. A family-friendly dish to add to your menu rotation!

Ingredients:

  • 2 tbsp olive oil
  • ½ cup butter (1 stick)
  • 1 pound chicken tenders
  • ½ tsp garlic powder
  • 2 tbsp minced garlic
  • 1 tsp salt, divided
  • ¼ tsp red pepper flakes
  • 1½ cups white rice (uncooked)
  • ½ cup dry white wine (such as Pinot Grigio)
  • ½ cup Parmesan cheese (grated or shredded)
  • 3 cups chicken broth
  • Salt and pepper to taste

How to Make Chicken with Garlic Parmesan Rice:

Step 1: Cook the Chicken

  1. In a large skillet, heat the olive oil over medium heat.
  2. Season the chicken tenders with salt, pepper, and garlic powder.
  3. Place the chicken into the skillet and sear until browned and completely cooked through. Set aside when done.

Step 2: Prepare the Garlic Sauce

  1. In the same skillet, add the butter, minced garlic, red pepper flakes, and ½ tsp of salt.
  2. Sauté over medium heat for a few minutes until fragrant.
  3. Adjust the heat to medium-high, then pour in the white wine.
  4. Cook for approximately 5 minutes, stirring constantly.
  5. Reserve 3 tablespoons of the pan sauce for later.

Step 3: Cook the Rice

  1. In the remaining butter sauce in the skillet, add the uncooked rice and stir well to coat.
  2. Pour in the chicken broth and season with the remaining ½ tsp salt.
  3. Bring the mixture to a low boil. Once boiling, adjust the heat to medium-low.
  4. Cover the skillet with a lid and simmer for about 20 minutes or until the rice is tender, stirring often.

Step 4: Combine and Finish

  1. Once the rice is tender, sprinkle the Parmesan cheese on top and arrange the chicken tenders over the rice.
  2. Replace the lid and remove the skillet from the heat. Allow the dish to stand for about 5 minutes to let the flavors meld.

Step 5: Serve

  1. Before serving, drizzle the reserved pan sauce over the chicken.
  2. Garnish with some parsley if desired.
