Big Pot of Chili Soup

Introduction

Chili soup is a warm, comforting dish that blends ground meat, beans, tomatoes, and spices into a flavorful pot perfect for feeding a crowd. Unlike thick chili, chili soup has a slightly lighter, brothier consistency, making it great for dipping bread, topping with cheese, or serving at parties and family gatherings. This recipe makes a large pot, enough for 10–12 servings, ideal for meal prep, freezing, or a cozy dinner on a cold day.

Ingredients

(For a big pot)

  • 2 lbs ground beef (or a mix of beef and pork)
  • 1 lb ground turkey or chicken (optional, for variety)
  • 2 tbsp olive oil
  • 2 large onions, chopped
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 4 cloves garlic, minced
  • 3 cans (15 oz each) kidney beans, drained and rinsed
  • 2 cans (15 oz each) black beans, drained and rinsed
  • 2 cans (28 oz each) crushed tomatoes
  • 1 can (15 oz) tomato sauce
  • 1 can (15 oz) corn kernels, drained (optional)
  • 4 cups beef broth (or chicken/vegetable broth)
  • 3 tbsp chili powder
  • 2 tsp cumin
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • ½ tsp cayenne pepper (adjust for heat)
  • 2 tsp salt (to taste)
  • 1 tsp black pepper
  • 1 tbsp brown sugar or honey (balances acidity)
  • 1–2 fresh jalapeños, sliced (optional, for spice)
  • Fresh cilantro, chopped (for garnish)
  • Shredded cheddar cheese, sour cream, green onions (for serving)

Instructions

  1. Brown the Meat:
  • Heat olive oil in a large heavy-bottom pot or Dutch oven.
  • Add ground beef (and turkey, if using). Cook until browned. Drain excess fat.
  1. Sauté Vegetables:
  • Add onions, peppers, and garlic. Cook until soft and fragrant (about 5 minutes).
  1. Season:
  • Stir in chili powder, cumin, paprika, oregano, cayenne, salt, and black pepper. Let the spices toast for 1–2 minutes.
  1. Build the Base:
  • Add crushed tomatoes, tomato sauce, and broth. Stir well.
  1. Add Beans & Corn:
  • Stir in kidney beans, black beans, and corn.
  1. Simmer:
  • Bring to a boil, then reduce heat to low. Cover and simmer for at least 45 minutes to 1 hour, stirring occasionally. (For richer flavor, simmer 2+ hours.)
  1. Balance Flavors:
  • Taste and adjust seasoning. Add brown sugar or honey if too acidic.
  1. Serve Hot:
  • Ladle into bowls. Top with cheese, sour cream, cilantro, or green onions.

Cooking Methods

  • Stovetop Method: Classic simmering in a Dutch oven.
  • Slow Cooker Method: Cook meat first, then add all ingredients to slow cooker. Cook on Low for 6–8 hours or High for 4 hours.
  • Instant Pot Method: Use sauté function for browning meat, then pressure cook on High for 15 minutes, natural release.

History of Chili Soup

Chili, or “chili con carne,” originated in the American Southwest, particularly Texas, with influences from Mexican cuisine. While traditional Texas chili has no beans, chili soup evolved as a lighter, bean-rich version that became popular across the United States. It’s especially loved in Midwestern states, where it’s served at potlucks, chili cook-offs, and family gatherings.

Benefits

  • Protein-packed: Ground meat + beans make it high in protein.
  • Rich in fiber: Beans aid digestion and support heart health.
  • Customizable: Can be spicy or mild, vegetarian or meaty.
  • Great for meal prep: Freezes well and reheats easily.
  • Immune-boosting: Tomatoes, peppers, and garlic are full of vitamins and antioxidants.
