Ingredients (Serves 6–8, about 12–15 pancakes):

3 cups (380 g) all-purpose flour

2 tbsp baking powder

2 tbsp granulated sugar (or up to 4 tbsp for sweeter pancakes)

½ tsp salt

2 ½ cups (600 ml) milk (room temperature)

2 large eggs

6 tbsp unsalted butter, melted (plus extra for cooking)

2 tsp vanilla extract (optional)

Pour the wet mixture into the dry mixture. Stir gently with a spatula until just combined—don’t overmix (a few lumps are fine). The batter should be thick and creamy.
