Baked Salmon in Foil with Asparagus and Lemon Garlic Butter Sauce
Ingredients:
For the Salmon and Asparagus:
4 salmon fillets (about 6 oz each)
1 bunch asparagus, trimmed
2 tablespoons olive oil
Salt and pepper to taste
4 lemon slices
For the Lemon Garlic Butter Sauce:
1/2 cup unsalted butter, melted
4 cloves garlic, minced
2 tablespoons fresh lemon juice
1 tablespoon fresh parsley, chopped
Salt and pepper to taste
Instructions:
Preparing the Lemon Garlic Butter Sauce:
In a small bowl, combine the melted butter, minced garlic, lemon juice, chopped parsley, salt, and pepper. Mix well.
Preparing the Salmon and Asparagus:
Preheat your oven to 400°F (200°C).
Lay out four large pieces of aluminum foil on a baking sheet.
Place a salmon fillet in the center of each piece of foil. Arrange the trimmed asparagus spears around the salmon fillets.
Drizzle the olive oil over the salmon and asparagus, and season with salt and pepper.
Pour the lemon garlic butter sauce evenly over each salmon fillet and asparagus.
Place a lemon slice on top of each salmon fillet.
Wrapping and Baking:
Fold the sides of the foil over the salmon and asparagus, covering completely and sealing the packets closed.
Bake in the preheated oven for 20-25 minutes, or until the salmon is cooked through and flakes easily with a fork.
Serving:
Carefully open the foil packets, as steam will escape.
Transfer the salmon and asparagus to serving plates.
Drizzle any remaining sauce from the foil packets over the salmon and asparagus.
