Ingredients:

For the Fritters:

  • 3 cups grated zucchini, thoroughly drained
  • 4 large beaten eggs
  • 2 minced garlic cloves
  • 1/4 cup all-purpose flour
  • 1 tsp table salt
  • 1/2 cup finely chopped ham
  • 1 1/2 cups shredded cheese**
  • 1/4 cup parmesan cheese
  • 1/2 tsp Sriracha or hot sauce
  • 2 Tbsp frying oil

For the Dipping Sauce:

  • 1/3 cup sour cream
  • 1 tsp whole milk
  • 1 minced garlic clove
  • 2 tsp lemon juice
  • A dash of salt and pepper

Instructions:

  1. Grate the zucchini and ensure all excess liquid is removed.
  2. In a mixing bowl, combine the drained zucchini with beaten eggs, minced garlic, chopped ham, parmesan cheese, Sriracha, and season with salt and pepper. Mix thoroughly, and then stir in the flour.
  3. Heat the frying oil in a large skillet. Add spoonfuls of the zucchini mixture and cook for approximately 2-3 minutes on each side. Be gentle when flipping.
  4. In the meantime, prepare the sour cream dipping sauce. Mix sour cream, whole milk, minced garlic, lemon juice, and a dash of salt and pepper in a separate bowl.
  5. Serve the crispy Zucchini Fritters hot with the refreshing sour cream dipping sauce on the side.
