INGREDIENTS

YIELD: 12 cannoncini

For the custard cream (crema pastiera):

3 egg yolks

3 tablespoons (30 gr) of all-purpose flour

1/2 cup (100 gr) of sugar

1 teaspoon of vanilla extract

8 oz (235 ml) of milk

For the cannoncini:

1 sheet of puff pastry, defrosted (about 8 oz, 225 gr)

1/4 cup (50 gr) of sugar

1 egg (for egg wash)

 

powdered sugar to decorate

 

PREPARATION:
Start by preparing the custard cream (crema pastiera):
Warm up the milk until hot (not boiling).
In a medium-sized pan, whisk the egg yolks with the sugar, vanilla extract, and flour, until light and fluffy.

Add the milk some at a time while whisking, making sure there are no lumps.

Here’s the preparation for making Cannoncini with Custard Cream:

### Custard Cream (Crema Pastiera):

1. Warm the milk in a saucepan until it’s hot but not boiling.

2. In a separate medium-sized pan, whisk together the egg yolks, sugar, vanilla extract, and flour until the mixture becomes light and fluffy.

3. Gradually add the hot milk to the egg mixture, whisking continuously to ensure there are no lumps.

4. Place the pan over medium heat and cook the mixture, stirring constantly, until it thickens to a custard-like consistency. This should take about 5-7 minutes. Remove from heat and let it cool.

### Cannoncini:

1. Preheat your oven to the temperature indicated on the puff pastry package.

2. Roll out the defrosted puff pastry sheet on a lightly floured surface. Cut it into 12 strips.

3. Spoon a small amount of custard cream onto one end of each strip.

4. Roll each strip of puff pastry around the custard cream filling, starting from the end with the cream.

5. Place the rolled cannoncini on a baking sheet lined with parchment paper.

6. Beat the egg to create an egg wash and brush it over the tops of the cannoncini.

7. Sprinkle sugar over the tops of the cannoncini for added sweetness.

8. Bake in the preheated oven for the time specified on the puff pastry package, or until the cannoncini are golden brown and puffed up.

9. Once baked, remove from the oven and let cool on a wire rack.

10. Dust with powdered sugar for decoration before serving.
