Strawberry Cheesecake-Stuffed French Toast

Ingredients:

For the strawberry cheesecake filling:

  • 8 ounces cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup fresh strawberries, chopped

For the French toast:

  • 8 slices of bread (such as brioche or challah)
  • 4 large eggs
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • Butter or oil for frying

To Serve:

  • Maple syrup
  • Fresh strawberries, extra for garnish
  • Powdered sugar (optional)

Instructions:

1. Prepare Strawberry Cheesecake Filling:

  • In a mixing bowl, beat the softened cream cheese, powdered sugar, and vanilla extract together until smooth and creamy.
  • Gently fold in the chopped fresh strawberries until evenly distributed. Set aside.

2. Make the French Toast:

  • In a shallow dish or bowl, whisk together the eggs, milk, and vanilla extract until well combined.
  • Spread about 2 tablespoons of the strawberry cheesecake filling on a slice of bread, then top with another slice to create a sandwich. Repeat with the remaining slices of bread and filling.
  • Dip each stuffed French toast sandwich in the egg mixture, ensuring both sides are evenly coated.

3. Cook the French Toast:

  • Heat a frying pan or griddle over medium heat and melt a small amount of butter or oil.
  • Place the stuffed French toast sandwiches in the pan or on the griddle and cook until golden brown on both sides, about 3-4 minutes per side.

4. Serve:

  • Serve the warm, stuffed French toast topped with maple syrup, fresh strawberries, and a dusting of powdered sugar if desired.

5. Enjoy:
