I picked up some snapper fillets š and shrimp š¤ at the farmers market this weekend from and griddled it to perfection! Iām having it for lunch today along with some cucumber tomato š„š salad and leftover garlic dill potatoes š„ that were steamed with crab legs, shrimp and corn on the cob š½.
For the snapper, pat fish dry, season with salt, ground black pepper, smoked paprika and olive oil. Griddle (or pan sear) each side for 3-4 minutes until blackened.
For the cucumber tomato salad cut English cucumber and plum tomatoes into 1 inch pieces. Toss with red wine vinegar, extra virgin olive oil, sea salt, cracked black pepper, fresh chopped parsley and fresh chopped dill.
