I picked up some snapper fillets 🐟 and shrimp 🍤 at the farmers market this weekend from and griddled it to perfection! I’m having it for lunch today along with some cucumber tomato 🥒🍅 salad and leftover garlic dill potatoes 🥔 that were steamed with crab legs, shrimp and corn on the cob 🌽.
For the snapper, pat fish dry, season with salt, ground black pepper, smoked paprika and olive oil. Griddle (or pan sear) each side for 3-4 minutes until blackened.
For the cucumber tomato salad cut English cucumber and plum tomatoes into 1 inch pieces. Toss with red wine vinegar, extra virgin olive oil, sea salt, cracked black pepper, fresh chopped parsley and fresh chopped dill.
