Potato Kielbasa Soup: A Warm and Filling Bowl
Ingredients

Chicken broth 4 cups
Kielbasa, sliced 1 lb
Shredded Parmesan ½ cup
Minced garlic 2 tsp
Potatoes, cubed 1 ½ lbs
Olive oil 1 Tbsp
Milk 2 cups
Onion, diced ½ cup
Shredded cheddar cheese 2 cups
Celery, chopped ½ cup
Parsley, chopped ¼ cup
Carrots, peeled & diced ½ cup
Salt and pepper To taste
Instructions:
Cook Kielbasa: Warm olive oil in a large pot over medium-high heat. Add the sliced kielbasa and cook until browned and heated through. Remove from pot and set aside, keeping the drippings.
Cook Vegetables: Add diced onion, celery, carrots, and minced garlic to the pot. Sauté, stirring now and then, until softened—about 5 to 7 minutes.
Simmer Potatoes: Pour in the chicken broth, then add the cubed potatoes. Bring to a boil, reduce heat to low, cover, and simmer until potatoes are tender, roughly 15 minutes.
Add Dairy & Cheese: Return kielbasa to the pot. Stir in milk, shredded cheddar, and Parmesan cheeses. Simmer for another 10 minutes, stirring occasionally until the cheese melts and the soup is heated through.
Season & Serve: Season with salt and pepper to taste. Garnish with chopped parsley before serving.
