Ingredients:

For the Jerk Marinade:

  • 3 lbs pork shoulder, boneless
  • 1 onion, chopped
  • 4 green onions, chopped
  • 4 garlic cloves, minced
  • 1 tablespoon fresh ginger, grated
  • 1 Scotch bonnet pepper, seeds removed and chopped
  • 1 tablespoon fresh thyme leaves
  • 2 tablespoons soy sauce
  • 2 tablespoons olive oil
  • 2 tablespoons brown sugar
  • 1 tablespoon ground allspice
  • 1 tablespoon ground cinnamon
  • 1 tablespoon ground nutmeg
  • 1 tablespoon ground black pepper
  • 2 teaspoons salt
  • Juice of 2 limes

Optional Sauce:

  • 1/2 cup pineapple juice
  • 1/4 cup ketchup
  • 1 tablespoon brown sugar
  • 1 teaspoon soy sauce

Instructions:

Preparing the Jerk Marinade:

  1. Blending Ingredients:
    • In a blender or food processor, combine chopped onion, green onions, garlic, ginger, Scotch bonnet pepper, thyme, soy sauce, olive oil, brown sugar, allspice, cinnamon, nutmeg, black pepper, salt, and lime juice. Blend until you achieve a smooth marinade.
  2. Marinating the Pork:
    • Place the pork shoulder in a large bowl or resealable plastic bag. Pour the jerk marinade over the pork, ensuring it is evenly coated. Massage the marinade into the meat. Marinate in the refrigerator for at least 4 hours, preferably overnight.

Cooking the Jerk Pork:

  1. Preheating Oven:
    • Preheat your oven to 350°F (175°C).
  2. Preparing Roasting Pan:
    • Place a roasting rack in a roasting pan. Add water to the pan to create steam during cooking.
  3. Roasting Pork:
    • Remove the pork from the marinade and place it on the roasting rack. Roast in the preheated oven for 2 to 2.5 hours or until the internal temperature reaches at least 160°F (71°C). Baste the pork with the marinade or pan juices occasionally.

Optional Sauce:

  1. Creating Sauce:
    • In a saucepan, combine pineapple juice, ketchup, brown sugar, and soy sauce. Simmer over low heat until the sauce thickens.
  2. Serving:
    • Serve the jerk pork hot, sliced, and drizzled with the optional sauce if desired.
