No Sugar Oatmeal Apple Carrot Bake

Ingredients:**

  • 2 cups (200 g) rolled oats, chopped in a blender (until coarse, like oat flour)
  • 1 teaspoon baking powder
  • 1 cup (240 ml) milk of your choice (almond, oat, or dairy milk all work great)
  • 1 large carrot, grated
  • 1 large apple, peeled and grated
  • 9 dried apricots, rinsed with hot water and chopped
  • 4 tablespoons raisins, rinsed with hot water
  • 1 teaspoon ground cinnamon (optional but heavenly)
  • 1 teaspoon vanilla extract (optional)
  • 2 tablespoons olive oil or melted coconut oil (for moisture)
  • A pinch of salt

Instructions:**

  1. Preheat your oven to 350°F (180°C) and lightly grease a small baking dish or line it with parchment paper.
  2. In a large bowl, combine the chopped oats, baking powder, cinnamon, and salt.
  3. In another bowl, mix the milk, grated carrot, grated apple, oil, and vanilla extract (if using).
  4. Pour the wet mixture into the dry ingredients and stir until everything is well combined.
  5. Gently fold in the chopped apricots and raisins. The batter will be thick and hearty.
  6. Spread the mixture evenly into your prepared baking dish.
  7. Bake for 35–40 minutes, or until golden brown on top and firm in the center.
  8. Let it cool for 10–15 minutes before slicing. It sets more as it cools!

Serving Ideas:**

  • Enjoy warm or chilled — it tastes amazing both ways.
  • Top with a spoonful of Greek yogurt or unsweetened applesauce for a creamy touch.
  • Sprinkle with crushed nuts (like walnuts or almonds) for extra crunch and healthy fats.

Benefits:**

  • Sugar-free & flourless: Perfect for clean eating and blood sugar balance.
  • Packed with fiber: Oats, carrots, and apples support healthy digestion and keep you full longer.
  • Rich in vitamins & minerals: Carrots add vitamin A, apples bring antioxidants, and dried fruits boost natural sweetness and energy.
  • Heart-friendly: Oats support healthy cholesterol levels.

Storage:**

Store leftovers in an airtight container in the fridge for up to 5 days, or freeze individual slices for quick grab-and-go breakfasts.

Conclusion:
This no-sugar oatmeal, apple, and carrot bake is proof that you don’t need flour or refined sugar to enjoy something truly delicious. Every bite tastes like cozy morning sunshine — naturally sweet, nourishing, and deeply satisfying.
