Japanese Cotton Cheesecake (Fluffy Soufflé Cheesecake)

Ingredients

  • 250 g cream cheese, softened
  • 50 g unsalted butter
  • 100 ml milk
  • 60 g all-purpose flour
  • 20 g cornstarch
  • 6 large eggs, separated
  • 120 g sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • A pinch of salt
  • Powdered sugar for decoration

Method

  1. Preheat the oven to 160°C (320°F). Line a round cake pan with parchment paper and prepare a water bath.
  2. Melt the cream cheese, butter, and milk together over low heat until smooth. Let it cool slightly.
  3. Separate the egg yolks and whites. Add egg yolks, vanilla extract, and lemon juice to the cream cheese mixture and mix well.
  4. Sift the flour and cornstarch into the mixture and stir until combined.
  5. Beat the egg whites with salt until foamy. Gradually add sugar and continue beating until soft peaks form.
  6. Gently fold the whipped egg whites into the batter in three additions to keep the mixture airy.
  7. Pour the batter into the prepared pan. Place the pan in a larger tray filled with hot water.
  8. Bake for about 60–70 minutes until the top is golden and the cake is set but still slightly jiggly.
  9. Turn off the oven and leave the cake inside for 10–15 minutes to prevent shrinking.
  10. Cool completely, then dust with powdered sugar before serving.

History

Japanese Cotton Cheesecake was created in Japan in the 1960s, inspired by traditional European cheesecake and the light texture of soufflé. Japanese bakers adapted the recipe by using whipped egg whites to create a softer, airy, and less dense cheesecake. It became popular worldwide because of its delicate texture and melt-in-the-mouth quality.
