1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon black pepper
1 teaspoon paprika
1 teaspoon salt
1 teaspoon sugar
¼ cup cornstarch
¼ cup water
For the breading:
1 cup all-purpose flour
2 large eggs
1 cup plain breadcrumbs
For frying:
3-4 cups vegetable oil or more as needed
Directions:
Prepare the Chicken Mixture: Place the chicken breast in a food processor and blend until minced. Add onion powder, garlic powder, black pepper, paprika, salt, sugar, cornstarch, and water. Process until well combined.
Shape the Nuggets: Using a 1-1/2 tablespoon measure, shape the chicken mixture into rectangular nuggets and place them on a baking tray lined with parchment paper. Freeze for 30 minutes to firm up.
Heat the Oil: Meanwhile, heat vegetable oil in a frying pan or deep fryer over medium-high heat.
Set Up the Breading Station: Prepare three shallow bowls with flour, beaten eggs, and breadcrumbs.
Bread the Nuggets: Dredge each frozen nugget in flour, dip in beaten eggs, and coat evenly in breadcrumbs, pressing gently to adhere.
Fry the Nuggets: Carefully place the breaded nuggets into the hot oil, frying in batches if necessary. Fry for about 6-8 minutes, turning halfway, until golden brown and crispy.
Drain Excess Oil: Once cooked, transfer the nuggets to a paper towel-lined platter or tray to drain excess oil.
