Homemade Breakfast Sandwiches: Easy, Affordable, and Delicious

My husband and I love the frozen breakfast sandwiches from the grocery store, but they can get quite pricey with only four in a box. So, I decided to make my own, which turned out to be super easy and much cheaper! Here’s what you’ll need:

Ingredients:

  • 12 eggs
  • 12 pork sausage patties (Kroger brand recommended)
  • 12 English muffins
  • 12 slices of cheese
  • Olive oil (for coating molds)
  • Salt and pepper (to taste)

Instructions:

  1. Prepare the Eggs:
  • Preheat your oven to 350°F (375°F for convection).
  • Coat the molds with olive oil to prevent sticking.
  • Crack an egg into each mold.
  • Bake for 17 minutes for fully cooked yolks. For a runny yolk, reduce the baking time.
  • Sprinkle salt and pepper on each egg to taste.
  1. Cook the Sausage Patties:
  • Preheat your oven to 350°F.
  • Place the sausage patties on a sheet pan.
  • Cook according to package instructions or until fully cooked, usually about 10-12 minutes.
  1. Toast the English Muffins:
  • Slice the English muffins in half.
  • Lightly toast them in a toaster or oven to your preferred level of crispiness.
  1. Assemble the Sandwiches:
  • On each English muffin, place a cooked sausage patty, a baked egg, and a slice of cheese.
  • Top with the other half of the English muffin.
  1. Storage:
  • Wrap each sandwich individually in plastic wrap or aluminum foil.
  • Store them in the refrigerator for up to 5 days or freeze for longer storage.

Reheating Instructions:

  • For refrigerated sandwiches, microwave wrapped in a paper towel for 1 minute and 30 seconds.
  • For frozen sandwiches, microwave for 2-3 minutes, checking halfway to ensure even heating.

Tips and Variations:

  • Healthier Options: Use turkey sausage or a plant-based sausage alternative for a lower-fat option. Whole wheat English muffins and reduced-fat cheese can also make the sandwiches healthier.
  • Customization: Add a slice of tomato, avocado, or spinach for added flavor and nutrients.
